Loading begins when the sausage mince is placed into the hopper and the electric motors driving the gear pump and vacuum pump are switched on. As a result, the piston of the mince cylinder begins to descend. The full loading cycle continues until a signal lamp lights up and the spool rod returns to its starting position. In addition, oil flows through a throttle fitted with a regulator and a safety valve into the cavity of the hydraulic motor. The rod of this throttle, with its regulator and safety valve, is set by means of a handle to the position required according to the desired output rate.

The hydraulic motor transmits rotation to a shaft carrying the nozzle and delivers reversing motion to the dosing cup. The reversing movement is produced by a gear, crank mechanisms and a connecting rod. The dosing cup begins to move around its axis at the moment its opening aligns with the opening of the mince cylinder. The mince then enters the cavity of the dosing cup under pressure and starts to push against the dosing piston.

The force is transmitted through the rod to the piston. Because the ratio of the working surfaces of one set of pistons is smaller than the ratio of the working surfaces of the other set, the pressure created in the piston cavity of the dosing hydraulic cylinder exceeds the pressure in the common line. The reduction valve then operates, the dosing piston moves down, and the cavity of the dosing cup fills with mince.

This process continues until the piston meets the dose regulator. The dosing can be adjusted on the fly, and its value is fixed on a scale. When the opening of the dosing cup aligns with the opening of the nozzle cavity — that is, with the atmosphere — the force of the oil pressure is transmitted through the rod to the dosing piston, which forces the mince out through the nozzle and into the casing. The stuffing process stops once the under-knee lever is released.
